Coronation Partridge Sandwich

Many find Coronation Chicken an absurd joke of the past, but it’s my favourite sandwich filling, and this is my book and it’s going in. By the end of the season, there are a lot of partridges knocking around in the freezer, feeling hurt and ignored. I hope they don’t find it an indignity to be included in this outdated recipe.

The following can be eaten as a salad or packed between layers of good chewy, malty brown bread.
