Don’t pull a face at the thought of sauerkraut, instead walk to the shelf and pick up a jar. This treatment of cabbage is delicious and, when mixed with onions, apples, Riesling and bacon, a perfect nest is created for the duck, once more, to sit upon.
Fermenting cabbages at the perfect temperature, sauerkraut is a business of no light undertaking. It’s one thing for me to ask you to marinate something a day in advance or cook something for 3 hours, but to have to fuss over a barrel
