Fish heads often end up in the bin, resulting in a tasty meal carelessly disregarded. Extra satisfaction lies in the knowledge that fishy was shown its deserved respect. Salmon heads are cheap, providing a dinner that would make the meanest scrimper smile. I’m including this as autumn/winter cooking as I freeze the heads of any salmon I’ve decided to keep after using the body - for gravadlax or smoking.
