Here is a down-to-earth treat that delivers almost instant gratification. Smoked oysters are now widely available in most supermarkets.
Quite simply, toast the bread and spread on a generous amount of butter (don’t be shy), applying oysters from tin to toast, taking with them a little of the oil as you go. Dress with lemon juice and black pepper and a pinch of cayenne. Cut the toast into quarters.
Serving portions are determined by how many tins of oysters you decide to take to bits of toast. I’m a heavy loader. Val’s h
