This treat is not as heavy as it may sound and is definitely one of my favourite puddings. I would use pre-packed and peeled sweet chestnuts.

In its look it should at least imitate its namesake in miniature. However, lacking in piping bag skills, mine resembles no mighty mountain capped with snow, but rather an odd heap. Therefore, I think it better for me to suggest that the whipped cream is actually a large cloudbank gathering over the Alps.
