I have decided to include an unseasonal recipe, but because for me bananas are such a big part of eating during the mean months, I just thought, what the hell. This is my mum’s version.

Ingredients

  • 6 bananas, peeled, cut in half and split lengthways
  • 50 g butter
  • 2 good tablespoons

Method

Preheat the oven to 200°C/400°F/Gas 6.

Place the bananas in the base of a heavy ovenproof dish. Dot the butter about evenly, a bit on the bananas, a bit on the bottom of the dish. Sprinkle over the sugar and grate some nutmeg hither and thither. Splash over the rum, and squeeze
