  • good chicken stock
  • fresh garden mint lemon
  • freshly ground black pepper

Method

Gently heat the required amount of stock on a low simmer. While it heats, put a small sprig of mint in a glass or cup with a slice of lemon. Before pouring the stock into the receptacle, add a good coarse grind of pepper and an additional small squeeze of lemon juice. Pour on to the lemon slice and mint, and don’t burn your lip. A shot of vodka can be a happy addition to this tea.
