I encountered this fiery alternative when staying with friends in Herefordshire. I have their permission to pass it on.

Ingredients

  • 1 bottle medium sherry or manzanilla
  • a small handful of bird’s eye chillies
  • 6

Method

Create some room in the bottle for the additives by immediately taking a large swig from the top, or pouring yourself a glass. Add the bits and bobs, replace the top and store the sherry for at least a week, before which you will not experience the full pokiness.
