  • a good pinch of large-flaked sea salt

Method

Ideally make this pastry the day before so it has time to chill. Sift the flour and salt into a large bowl and drop in the butter. Toss it around with a large metal spoon to coat it in flour. Mix the water and lemon juice and pour it into the flour and butter. Use a round-tipped knife to cut across the bowl several times, turning it continually while chopping the butter into the flour until the
