A flauta (meaning a flute, so called because of its shape) is a tortilla shallow-fried with its filling snugly rolled inside. I’m crazy about tacos but sometimes, depending on the weather or my mood, by frying them in this way until crispy and golden, the flautas treatment just seems to make a good thing even better. This is a heavy hitter for cold autumn and winter days.

Although a Spanish chorizo is a markedly different thing from the Mexican version, it still makes
