Three blissfully simple layers. Cherries poached in gently spiced rum make a syrupy base. The middle has yoghurt lightened with a cloud of whipped cream. Then a blanketing layer of molten muscovado brings toffee depth and a murmur of smoke. Few single ingredients offer such incredible complexity as muscovado - no need to burn sugar or make caramel, it does it all for you by simply melting into the cream below.
