The sharpness of Bramley apple (or choose another similarly sour variety) and the woody warmth of spice make these custard tartlets a textural and flavour delight. Nutmeg and mace have a natural affinity as they come from the same plant: crack open its golden fruit and you will find a hard pip of nutmeg ensnared in red, lacy mace. The two also pair well with cinnamon as they share many of the same flavour notes, including the medicinal-tasting compound eugenol, also found in clove, allspice
