Teff is a gluten-free whole grain native to northeast African countries, such as Ethiopia. It’s as versatile as some of its favourite friends buckwheat and quinoa, and it’s mild and nutty and yummy as a creamy porridge. This recipe also works beautifully with another African favourite, sorghum, which is also gluten free and highly nutritious.
