Spelt is a beautiful, ancient whole grain that is sweet, nutty and delicious (try making my Gem Squash and Barley Risotto using spelt instead). Ground spelt makes a brilliant all-purpose whole-grain flour that is high in protein and fibre, although it’s not gluten free, so if you are highly sensitive to gluten, this is not for you.
