This is a fun, delicious and nutritious version to take to work: The night before, to a medium-sized glass jar with a lid (the jar should be able to hold about 2 cups liquid), add 1 Tbsp curry paste, ½ tsp grated fresh ginger, 1 tsp fish sauce, handful chopped fresh mushrooms, 1 head pak choi (halved lengthways), 100 g courgetti or rice noodles, and a few slivers fresh red pepper. In the morning, add a handful shredded roast chicken. Take the jar to work, keep it in the fridge and top with boiling water and a squeeze of fresh lime juice just before serving.
