Creamy Cauliflower Mash

Method

Roughly chop 1 large head cauliflower, then cook in a large saucepan of salted boiling water for 10–15 minutes, or until easily pierced with a knife. Remove, drain and allow to steam-dry for a few minutes. Add 1 Tbsp each of butter and olive oil and blend until smooth using a stick blender. Add salt and freshly ground black pepper to taste.
