Basil and Raspberry Chia Pudding Lollies

Ingredients

What you’ll Need

  • 1 cup fresh or frozen raspberries (or mixed berries)
  • 2–3 Tbsp chia seeds
  • 1 × 400 ml can coconut milk
  • 1 Tbsp honey (or rice malt syrup or a few drops of stevia liquid), or more to taste
  • 1 Tbsp chopped fresh basil (or mint)

Method

What to do

Purée the raspberries using a stick blender, then mix all of the ingredients together, adjust for sweetness if necessary, divide between ice-lolly moulds and freeze until set.
