These need very little introduction. The combination of a syrupy spiced red wine, tender poached pears and a rich chocolate sauce is utterly wonderful.
In a medium-sized saucepan over medium-high heat, add the wine, thyme, star anise, vanilla and honey. Bring to a simmer and reduce the heat to low-medium.
