These sweet potatoes are one of my favourite things to make. You can top them with the dressing below or, if you don’t want something spicy, simply drizzle over some olive oil and lemon zest or a few drops of truffle oil and Parmesan. Add a bit of freshness, such as coriander or baby spinach, and you’ll have a gorgeous dish, ready to serve.
