  • 4 or 5 medium-sized birch boletes
  • 1 black sausage, sliced
  • 3 spring onions, chopped finely

Method

Chop the boletes into small pieces, heat enough butter to cover the base of the pan. Fry the black sausage, the mushroom pieces and the spring onions until well done, about 8 minutes. Taste a piece of the mushroom and season. Add the fresh cream and remove from the heat. As soon as the cream begins to bubble spoon the mixture onto four large slices of freshly cooked toast.
