Truffles en Croûte

Method

Truffles (as many as you can find!), lean bacon slices, puff pastry.

Halve or quarter large truffles to walnut size (use small ones whole), then wrap in a slice of lean bacon. Roll out the puff pastry and cut into 10 cm (4 in) squares. Place each bacon-wrapped truffle in the middle of a square of pastry, fold in the four corners one at a time to make a little parcel, seal the ends together and bake until golden brown.
