Start the cooking with the spices in the olive oil – I used a little curry powder and paprika mixed together with a small amount of tomato purée, then add the red onion in rather large pieces so that you can still see it in the final dish. Clean and halve the mushrooms then gently sauté the mushrooms, the bacon and the red onion for about 15–20 minutes in a heavy pan.
