  • Dice puffballs into about 40 small cubes, then make an oil and vinegar dressing

Method

I am allowing about ten cubes per person to make a small starter. Pour liberal amounts of dressing onto the raw mushroom, it will absorb it all so be sure to make plenty. If oil and vinegar dressing is not your favourite try any other combination that you like. This recipe was the idea of Alan Davidson (of fish cookery fame). Alan made it for us when we found about six giant puffballs on Hampst
