Wipe the mushrooms with a damp cloth and chop them finely. Heat the butter in a heavy pan, add the onions and bacon, and sauté until the onions are tender. Add the mushrooms, thyme, salt and pepper, and cook over low heat for 5 minutes until the mushrooms are soft. Blend in the flour and allow the mixture to thicken slightly, put to one side.
