Purple Pasta

Method

Last year I went out with the Slow Food group foraying and we found hundreds of purple deceivers. We experimented with making a sauce for pasta with them and it was voted a success.

The mushrooms were fried with finely chopped onions in butter and after cooking for about 6 minutes we added a glass of white wine and when it had come back to heat we stirred in a good dollop of cream. Then the sauce was amalgamated with the cooked pasta and served piping hot.
