Hawthorn and Potato Salad

Ingredients

  • 450 g (1 lb) potatoes
  • 600 ml (1 pint) hawthorn buds/leaves
  • 3 tablespoons olive oil
  • 1 tablespoon white wine
  • 2 tablespoons white, malt or wine vinegar
  • good pinch each of salt and pepper,
  • 1 lettuce

Method

Boil the potatoes. If using new potatoes, boil them in their skins then rub off. Dice while still warm and mix with all the ingredients except the hawthorn and lettuce. Mix in hawthorn when cold and serve on a bed of lettuce.
