Collect a good basket of laver, avoiding the very sandy patches. The cleaner you pick it the less washing you will need to do! Break up the large pieces and wash them thoroughly in cold water then boil steadily for about 4 hours in a large pan, checking every 30 minutes to see it does not boil dry. It is cooked when the sheets have broken up into tiny pieces which make a smooth purée. Alternatively, it can be cooked much more rapidly in a steamer. Drain away any excess liquid and store the
