Stir Fried Enteromorpha

Method

Wash and clean the enteromorpha thoroughly and then heat a light oil, like sunflower seed oil, in a wok or ordinary saucepan. Take the enteromorpha in small handfuls, quickly fry until crisp and serve immediately.

This is a delicious dish very similar to the crispy, fried seaweed served in good Chinese restaurants. It is well worth trying, especially as in many areas it is so common. It can also be added to salads.
