  • Thyme
  • bay leaves
  • peppercorns
  • parsley
  • muslin
  • cotton

Method

For each bouquet cut a 10 cm (4 in) square from the muslin. Take a good sprig of thyme and parsley, 1 bay leaf, 2 peppercorns and place them on the square of muslin. Pull up the sides and tie the small bundle with cotton, leaving the ends long so that you can hang them over the edge of the pan, then the bouquet can be easily removed before serving.
