Scots Cream Crowdie

Ingredients

  • 600 ml (1 pint) double cream
  • 50 g (2 oz) coarse oatmeal
  • 50 g (2 oz) caster sugar
  • 1 tablespoon rum
  • 100 g (4 oz) fresh blackberries (or raspberries)

Method

Put the oatmeal in a thick-bottomed saucepan and shake it over the heat until crisp. Beat the cream to a thick froth and stir in toasted oatmeal, sugar, rum and fruit. Serve at once.
