Blackberry Coulis

Method

Collect a reasonable amount of blackberries – at least a couple of good handfuls – and boil in a little water with a small chopped apple and a little sugar. Using a potato masher crush the mixture down in the saucepan, then press all the juice out through a fine sieve. Simmer the strained juice for a further 20 minutes to reduce the consistency and check to see if it needs added sugar. Ideal served on yogurt or with porridge or muesli for breakfast.
