Method

Cut burdock roots into long, thin pieces the size of matchsticks. Place in an open heavy pan and cover with water, adding a good dash of soy sauce and a small pinch of salt. Simmer for 15 minutes and then allow the juices to evaporate so the soy-sauce flavour is absorbed in the cooked roots, but make sure that it does not catch. The flavour of the burdock pieces will be strong but worthwhile.</
