Method

Split fresh chestnuts and boil them in their skins for a few minutes to make it easy to skin them, remove the skins and boil for about 20 minutes to soften them. Drain off the water, cover with a sugar syrup and simmer slowly for 1 hour making sure they do not catch or boil over. Remove the chestnuts from the sugar solution and coat them thickly with sugar, then bake them in the oven for a few minutes. When you take them from the oven, squeeze a drop of lemon juice on each and dust them with caster sugar.
