Method

Boil the sap as soon after collecting as possible as it can very easily go off. Add the sugar to the boiling liquid and simmer for 10 minutes. Place the chopped raisins in a polythene bucket, pour the boiling liquid onto them and add the lemon juice. Start the yeast in a glass. Leave until the mixture cools to blood heat, then add the started yeast. Leave to ferment in the covered bucket for 3
