Sumac Lemonade

  • 4 cups (1 litre) sumac berries
  • 4.5 litres (1 gallon) nearly boiling water
  • 2 cups (450 g) sugar


De-stalk the berries, put them in a saucepan, pour the near-boiling water over them, and let them steep, covered, for about 15 minutes. Strain through a cloth into a large jar, add the sugar, and stir until it dissolves. Allow the liquid to cool, then seal the jar tight and refrigerate. Serve the lemonade diluted to half strength with water and lots of ice.

This is a very refreshing summer drink.
