You’ll need a clean metal knitting needle (or I usually cut a 30 cm strip from a wire coat hanger) to roll the macaroni around. It’s important to measure the ingredients accurately - if the dough is too wet it will stick to the needle, and if it’s too dry it won’t roll around it. This can be quite a fun thing to make with a few friends.
Mix flour, salt, egg and water in an electric mixer and knead, using a dough hook or by hand, for 3-5 minutes, until dough comes together and is very smooth. It needs to be quite dry. Wrap in plastic film and rest in the refrigerator for 5-6 hours or overnight. Break off a piece of dough the size of a small walnut.
