  • 1 cup sugar

Method

Preheat oven to 150°C. Toast hazelnuts in the oven (150°C) for about 20 minutes until skin darkens a little. Wrap in a tea towel while still hot and rub well to remove most of the skin. Combine sugar and water in a saucepan and boil over a high heat until it has a light caramel colour,
