Whisk yolks with half the sugar until pale. Sift flour over the egg mixture and mix well. Combine milk, vanilla bean and remaining sugar in a saucepan and bring to the boil. Pour hot milk into the egg mixture, whisking constantly. Return mixture to the saucepan and stir over a low heat until it just comes to a simmer.
