At MG Garage I often served this as part of the cheese course, sometimes making gruyère wafers instead of parmesan (but always with parmesan cream). You can also use apples or other pears, such as Williams, in this recipe. Balsamic vinegar can be used instead of apple balsamic vinegar, or you can make your own by grating a green apple, combining it with a cup of good balsamic vinegar, bringing it to the boil, straining, then reducing the liquid by half; cool before use.
