Peel cucumber and slice into wafer-thin discs using a mandoline. Combine vinegar, salt, pepper and sugar in a small saucepan and bring to the boil. Remove from heat and add cucumber, spring onion and chilli. Allow to cool then refrigerate until required. When ready to serve, top oysters with a little of the pickled cucumber mixture.
