I learnt to make this type of shortcrust pastry using the bramble cake recipe of Stephanie Alexander’s grandmother. The original pastry was made with self-raising flour and lard, and seemed indestructible. I have changed it over the years, and now use butter instead of lard and a combination of plain flour and baking powder instead of self-raising flour.
