Do not use very ripe figs for this dish or they may collapse when cooked. A muscat wine gives the figs a good flavour.

Ingredients

  • 8 firm figs, stalks removed
  • 2 tablespoons caster sugar

Method

Preheat the oven to 200°C/400°F/gas mark 6. Butter a baking dish just big enough to hold the figs. Stand them in the dish and sprinkle over the sugar and spices. Discard the pith from the strips of orange peel, and tuck them between the figs. Pour over the orange juice and the w
