A flourless chocolate mousse cake, the sort for decadent dinner parties when only something rich and densely chocolaty will do. What makes this special is the use of a whole vanilla bean, pod and all, which gives an incredible depth of flavour, almost fruitiness, alongside the roasted nuts.

Grease and line a loose-bottomed 20 cm (8 inch) cake tin. Heat the oven to 180°C/160°C fan (350°F)
