Indonesian sweets often come in a pretty palette of jade, white and shocking pinks. There are whisper-light steamed sponges, sugared doughnuts and chewy, gooey sweetmeats made from glutinous rice or tapioca. My enduring favourite are these treacly coconut-stuffed pancakes.

Two delightfully delicate yet complex flavours are at play. The first is pandan leaf, which has a distinctive bosky-floral aroma and stains the crepes green. (If you can’t get the fresh leaves, pandan paste or ext
