One of my favourite recipes is by my friend Joe Trivelli for chocolate amaretti. They are incredibly quick to make, cook and eat (and I love that he wrote it as a small batch, the sort of thing to throw together when you have a left over egg white).

I was musing with Joe whether I could make a spiced hazelnut version. Being Italian, he was quick to disapprove of using hazelnuts here, but soon warmed up to the idea and started riffing on spices. We settled on cardamom and here is the
