In the seventeenth century, a posset was a wine and spice-spiked custardy drink taken at bedtime by newlyweds. Today, it has evolved into a softly set cream to be enjoyed by everyone.

Whereas panna cotta uses gelatine to set the cream, possets use the thickening powers of citrus alone to do the job, so are a cinch to make.
