Dried limes are an Omani way of preserving the fruit, leaving them as hard balls supercharged with flavour. Black ones are the most intense. They are citrusy, yes, but also have musky, funky fermented notes that make this Daliesque combination of chocolate, olive oil, salt and toast even more special and unexpected. It is rich and bittersweet, but each serving holds just a few tantalising mouthfuls.
