A bright and refreshing way with tropical fruits popular on the island of Java, Indonesia. The dressing is wonderfully tangy and sweet with a good thwack of chilli heat. This comes from sambal oelek, a hot and sharp seasoning paste made with red chillies and salt.

Vary the fruit as you like but try to choose ones that have a crispness, so firm mangoes are preferable to juicy, sweet ones in this instance. You can also add vegetables such as cucumber or daikon into the mix if the mood
