In paying cookie homage to the sublime Austrian pastry called Linzertorte, I have replaced the fiddly lattice top of the torte with a delicate crust topping of almonds, sugar, butter, and egg. After cutting the whole business into serving pieces, you have raspberry “sandwiches,” with cookie pastry as the bottom layer. Despite all the good things that go into them, these are not overly sweet—people have been known to devour them for breakfast.
