Hazelnuts (or filberts) are the caviar of nuts, the epitome of nuttiness, rich yet delicate. Their qualities are celebrated in this recipe for a classic macaroon made with only four ingredients, counting the pinch of salt. A slightly fancier version includes the optional chopped candied cherries. A dusting of confectioners’ sugar is an attractive finish for macaroons both plain and fancy.
